
Garlic Ginger Chicken Rice Bowl

low cal spray oil
1 tsp ground corriander
1 tsp ground cumin
1 tsp garam masala
1 cm piece fresh ginger
1 medium onion
1 garlic clove
1 pear
3 large parsnips
salt & pepper
800ml vegetable stock
Gently sweat off the garlic and onion in the pan with a little spray oil for 10 mins until soft.
Add the garam masala, corriander, cumin and ginger, stir well and then cook for about 2 mins.
Add the parsnip and the stock. Bring to the boil, then reduce heat, cover the pot with a lit and let it simmer for 30 mins.
Add the pear and then blend until smooth.
Return to the saucepan and reheat to serve and season with salt and pepper if required
