300g thin cut steak
1, deseeded and sliced yellow pepper
1, deseeded and sliced green pepper
400g tin black beans or kidney beans
low cal spray oil
1 tsp ground cumin
chopped corriander
2, deseeded and chopped tomato
a pinch of salt and pepper
1 tsp mild chili powder
2 cloves garlic
1 red onion
4 wholemeal wraps
Cut beef into strips, put in a bowl with the spices and the chopped garlic and leave aside while preparing the rest of the food.
De-seed and slice the peppers and tomatoes and thinly slice the onion.
Heat the pan and once it’s hot enough spray with some oil and quick fry the steak for about 2 mins, then remove and leave to rest on a plate.
Add the peppers and just 1/2 of the sliced onion. Add a splash of water to stop them burning. Season with salt and pepper.
Drain and rinse the beans, then add them along with the cooked beef back to the pan and reduce heat.
Meanwhile heat the wraps either by popping into the microwave for 30 seconds or into a warm oven for a few mins.
Serve the mix into the wrap along with a sprinkle of the remaining sliced onion, mixed lettuce leaves and some chopped corriander.
