240g Spaghetti or linguini
4 Egg yolks
7 Bacon medallions, chopped
60g Parmesan

Cook the pasta according the packet instructions. Meanwhile, separate the eggs and whisk the egg yolks and combine with 50g of the
Parmesan.
Fry the bacon medallions until crisp. Once the pasta is cooked, take three large ladles of the pasta water.
Strain pasta, add in the ladles of pasta water, bacon, egg yolks and Parmesan.
Stir well and add lots of freshly cracked black pepper.
It takes a minute or two for the sauce to thicken, and when it does….Serve with the reserved Parmesan and enjoy! Don’t forget to pair with with some veggies or tossed salad on the side for the perfect Unislim balance
