Slow Roast Tomato Salad

Ingredients

12 Vine tomatoes

1 clove Garlic, finely sliced

1 tbsp Balsamic vinegar

1 tsp Olive oil

1 tbsp Fresh oregano/parsley/basil

Method

Serves 4 
1 yum per serving

Preheat oven to 150 or gas mark 2.

Place tomato halves cut side up in oven tray.

Drizzle with oil, balsamic vinegar and salt and pepper.

Roast until soft and charred for approx 45 mins.

Sprinkle with oregano. Serve chilled with a leafy salad.
