1 Large red onion
1 Red pepper
3 Garlic cloves
1 piece Ginger
1/2 Jalapeno pepper
1 tbsp Curry powder
1 tsp Ground corriander
200g Chicken stock
400g Cooked turkey
200g Frozen peas
Chopped corriander
Lime juice
Place onion & red pepper in a food processor and pulse until chopped.
Add the mixture into a large pot with a little water and simmer until soft.
Meanwhile, return the bowl to the processor.
Add in the garlic, ginger, jalapeno and whizz together.
Add this mixture to the pot, along with the curry powder and coriander and stir.
Add the chicken stock and simmer for about 10 mins, then add the turkey, peas, coriander and lime juice.
Simmer until heated through
Season with salt and pepper and serve.
