120g noodles
1 cucumber, de-seeded and sliced
2 small carotts
1/2 red pepper
6 spring onions, green part only
25g sesame seeds
low cal spray oil
1 ginger, minced
1 garlic, minced
2 tsp soy sauce
2 tsp vinegar
3/4 cup vegetable stock
For the sauce, heat the low cal spray oil in a small saucepan. Add the ginger and garlic, then take the pan off the heat. Whisk in the remaining ingredients and set aside.
Cook the noodles in accordance with the package instructions, and drain well.
Stir half the sauce into the noodles. Add all the vegetables except the cucumber. Once the noodles have cooled to room temperature, cover them and refrigerate.
Before serving, toss in the remaining sauce and cucumber. Serve cold.
