200g potato
200ml malt vinegar
sea salt, to taste
low cal spray oil
Preheat oven to 230°C
Using a mandolin, or a knife or even a potato peeler, thinly slice the potato.
Soak the potato slices in malt vinegar and refrigerate for at least 15 mins. The longer you leave it, the better the taste.
Remove from the refrigerator, and pat dry with paper towel. Spray with low cal spray oil and sprinkle with salt.
Put on a wire baking rack as this makes them crispier, and cook for around 15 mins, until they are crisp and golden.
Place on a cooling rack.
