2 fillets of salmon
12 baby new potatoes
2 tsp oil
1 tbsp balsamic vinegar
8 large (trimmed at each end) asparagus spears
8 cherry tomatoes
A handful of chopped basil leaves
Heat oven to 200 degrees.
Tip the potatoes into a large oven dish, drizzle with 1 tsp oil and roast for approx 15 mins. Add the salmon fillets and asparagus, drizzle 1 tsp of oil and bake for 10 minutes further.
Finally, add the tomatoes, drizzle the balsamic vinegar over, and return to the oven for a final 5-10 minutes.
Serve immediately, spooning the juice from the oven dish over and garnish with fresh basil.
