8 Rice cakes
1 Large Carrot, peeled and roughly chopped
130g Dates (Medjool best!)
1 tsp Cinnamon
1/2 tsp Cardamon powder (optional!)
1/2 tsp Ground Ginger
100g White Chocolate
1/2 tsp Coconut Oil
5g Additional Pecans, finely chopped
1 tbsp Dessicated cononut
In a food processor, blitz the rice cakes, carrot, dates and spices for 1 minutes.
Roll into 20g balls (use a scale, it’s really easy) using a tablespoon or ice cream scoop.
Chill for 10 minutes.
Melt the white chocolate and coconut oil in the microwave in 30 second bursts until melted. Dip the balls into the melted chocolate and top with a little sprinkle of the chopped pecans and coconut.
Chill and enjoy in moderation.
