Healthy Halloween Brack
A spooky healthy version on a Halloween classic

2 digestive biscuits
300g raspberries
200g quark
3 tbsp sweetener
1 tsp vanilla essence
1 tbsp water
Add majority of the berries (keeping some aside for decoration), water and 2 tbsp sweetener into a saucepan over low heat. Bring to a boil, stirring occasionally. Cook the berries for about 5 minutes until they reduce and start to form a sauce. Allow to cool.
While the berries are cooling crumble up the digestive biscuits and spread into the bottom of two serving glasses.
Mix the quark together with the remaining tablespoon of sweetener and vanilla essence.
Start layering up in your glasses. Digestive biscuits followed by half the sweetened quark, some raspberry sauce, topped with more sweetened quark and some raspberries on top to decorate.
