Method

Ingredients:

  • 1 small onion, peeled and trimmed on ends
  • 1 large celery stick
  • 300-400mls water
  • 1 vegetable or chicken stock pot
  • 1 red pepper
  • 3 carrot, scrubbed, ends trimmed
  • 1 tsp thai 7 spice seasoning
  • 2 garlic clove, peeled
  • 2 tins chopped tomatoes

Method:

Place a large saucepan over medium heat.

Add the onion, celery stalk, carrot, garlic clove and peppers along with the 7 spice and let soften slightly.

Then add both cans of tomatoes with their liquid into the saucepan with a stock cube and 300mls of water

Reduce heat and simmer ingredients for around 30 mins.

Turn off heat and transfer ingredients from pan to blender.

Blitz ingredients on high until soup is smooth in texture.

Pour soup in bowls.
