This recipe has 4 Bites for the lot with plenty of servings in each batch. The perfect dip for autumnal parties.
- 1 mini pumpkin (or 200g of regular pumpkin)
- 120g cream cheese light, eg philadelphia light
- 5 chives, chopped (extra to garnish)
- 2 Spring onions, chopped
- 1 Apple, sliced
Chop the top off your Mini Pumpkin and set aside, Microwave the rest of the pumpkin for 5 minutes or until softened. Set aside until cool.
Spoon out the inside of your mini pumpkin, leaving a hollow centre
Blitz together half of the light cream cheese with the pumpkin to create a puree texture. Once thoroughly combined add in the remaining cream cheese.
Fry of spring onion for 2 minutes and stir into the pumpkin mixture. Mix in the chopped chives, leaving a little for garnish at the end.
Pour the dip back into the pumpkin casing and garnish.
Chop some apple slices or veggies and get to dipping!
Tip: Add some chopped, cooked bacon medallions to your dip for a little extra bite!
