1/3 cup Finely cut shallots
1/3 cup Chopped celery
2 cups Sliced cauliflower
3-4 Sliced and peeled potato chopped,
400 ml Chicken stock
1/2 tspn Salt
1 tspn Lemon Juice
1 spray Low cal spray oil
Heat oil in pan adding the shallots and celery.
Cover and cook for minutes 2.
Then add in the chicken stock, cauliflower, potato and salt and bring to the boil.
Cover and simmer for 15 minutes or until vegetables are soft.
Add the lemon juice and blend untill smooth.
