2 X 30g Wholemeal bread
No added sugar tomato relish
1 Large tomato
2 Eggs
Salt and pepper
Toast the bread then spread with 1tbsp of no added sugar tomato relish. Slice 1 large tomato and layer onto the toast ( if you have time, grill the tomato slices for a few minutes first). Meanwhile, heat a pot of boiling water and add a drop of vinegar. Set the water to simmer then crack the eggs into the water. let them cook for 3-4 minutes (depending on how well you like it cooked). Lift out with a slotted spoon and place on top of the tomatoes. Add some salt and pepper and enjoy.
