Piri-Piri Chicken

Ingredients

low cal spray oil

1 chopped red onion

8 chopped & 4 crushed garlic cloves

1 chopped red pepper

3 chopped Chili peppers

juice of 1 lemon

1 tbsp white wine vinegar

1 tsp oregano

1 tsp smoked paprika

50 ml water

4 chicken breasts, boneless and skinless

salt and pepper

Method
Piri-Piri Sauce:

To make the Piri-Piri sauce, heat the oil in a saucepan and add the onion.

Cook until soft, then add the chopped garlic, red pepper, chillies, lemon juice, vinegar, oregano, paprika, water and a dash of salt.

Simmer for around 25 minutes and then mix in a food processor until smooth.

Coat the chicken with crushed garlic, lime and salt and pepper.

Heat oil on a pan and cook the chicken for 5 minutes on each side.

Pour the piri-piri sauce over the chicken breasts and serve with salad and a wedge of lemon.
