1/4 Red cabbage, grated
1/4 White cabbage, grated
2 Large carrots , grated
3 Scallions, sliced
small bunch Coriander, chopped
small bunch Mint leaves, chopped
60g Salted peanuts, roughly chopped
3 tbsp Soy sauce
2 tbsp Fish sauce
2 tbsp Lime juice
2 Garlic cloves, crushed
2 tsp Sweetener
1 tbsp Sesame oil
Start by preparing the vegetables. Grate the red cabbage, white cabbage, and carrots. Slice the scallions, chop the coriander and mint leaves, and roughly chop the salted peanuts. Next, make the dressing. In a jar, combine the soy sauce, fish sauce, lime juice, crushed garlic, sweetener, and sesame oil. Shake the jar well until all the dressing ingredients are thoroughly mixed.
In a large mixing bowl, combine the grated red cabbage, grated white cabbage, grated carrots, sliced scallions, chopped coriander, and chopped mint leaves. Pour the prepared Asian dressing over the vegetable mixture and toss everything together until the slaw is well-coated with the dressing.
Transfer the slaw to a serving dish and sprinkle the roughly chopped salted peanuts over the top. Serve the slaw with your favourite protein. Enjoy your delicious Peanut Asian Slaw!
