Ingredients

500g Parsnips

1 tsp Olive oil

to taste Salt and black pepper

Method

Preheat the oven to 160°C

Peel the parsnips into thin strips, discarding the skin

Place into a bowl with the olive oil and salt and pepper and toss

Spread them out on baking tray so they don’t overlap and bake for 15-20 minutes, turning half way, untill crispy and golden

Serve with some Forever Free Hummus or whip up some Forever Free Salsa from your Plan
