One Pot Mexican Chicken

Everyone loves Fajitas but sometimes you’re just not in the mood for the mess! This one pot Mexican chicken bowl has all the fajita vibes, but all in one pot, so less clean up!

Ingredients

4 boneless skinless chicken breasts

1 packet Fajita seasoning mix

1 Large onion

2 Mixed peppers

1 tin Tomatoes

1 Chicken stock cube

1 tin Black beans

2 packs Microwave rice

Method

Garnish
Jalepenos, spring onions, coriander, lime wedge

Cheats cheese sauce
4 slices of processed cheese
Splash of water

Toss the chicken in the seasoning and fry over a medium heat in a non stick pan. Once coloured well, set aside. Add more spray oil and add the pepper and and onions. Stir fry over a high heat for a few mintues until coloured. Add the tomatoes and chicken stock cube and bring to the boil. Allow to reduce for 10 minutes and then add back in the chicken, rice and beans. Simmer, stirring frequently. Whislt simmering, add your cheese to a non stick pot and add a couple of splashes of water and stir until the cheese has melted. Season to taste.

Pour your rice mixture into serving bowls and garnish to your liking.
