200g oats
100g strawberries, chopped
25g sunflower seeds
2 bananas, mashed
1 tbsp honey
2 tbsp olive oil
Mix the oats, strawberries and seeds in a large bowl.
Mash the bananas and add to the mixture along with the oil. Heat the honey for 20 seconds in the microwave and add to mixture.
Spoon into a tin and bake for around 25 minutes at 180°, until golden brown.
After 10 mins in the oven, cover with parchment paper before placing back in the oven again for the remaining 15mins – this will prevent the fruit from burning.
Remove from the oven and slice into 12 bars while still warm.
Tip onto a wire tray and allow to cool fully before eating.
