Low-cal spray oil
1/2 red onion, diced
1/2 red pepper, deseeded and diced
2 rashers lean back bacon (fat removed), diced
1 free-range large egg
2 tbsp skimmed milk
2 tbsp chopped parsley
60g grated Cheddar cheese
Salt and pepper
Lightly spray a pan with oil and cook the onion and red pepper until tender.
Add the bacon and cook for 2-3 minutes.
Divide between 2 deep non-stick muffin tins that have been sprayed with oil.
Beat the egg and milk, and stir in the parsley, cheese and seasoning.
Pour into the muffin tins.
Bake at 190°C, gas mark 5 for 15-20 minutes until well risen and golden brown.
