Mushroom and Courgette Pasta

Ingredients

1/4 plate wholemeal spaghetti

300g mushrooms, thinly sliced

2 courgette, thinly sliced and quartered

240g peas

2 garlic cloves, thinly sliced

2 thyme sprigs

sea salt and grounded black pepper

30g parmesan, grated

60g quark

Method

Add water to a large pot and place over medium high heat.

Combine spaghetti, mushrooms, courgette, peas, garlic, thyme into the water.

Allow to boil; reduce heat and simmer, uncovered, until pasta is cooked through and liquid has reduced, about 8-10 minutes.

Stir in Parmesan and quark. Add seasoning to taste.

Serve immediately.
