Mexican Tuna Melt

Who doesn't love a good tuna melt? This one has a Mexican twist that has a lil heat, but you can easily drop the Jalapenos if you want a toned down version. But our advice is, live on the edge and go for it!

Ingredients

1 tin Tuna in brine or springwater, drained

60g Wholemeal or Sourdough bread of your choice

1/2 small tin sweetcorn

70g Lightest Mayo

6 Pickled Jalapenos, chopped

1 Small Red onion, finely diced

small bunch of fresh coriander, chopped

1 Tbsp sriracha

30g Cheddar cheese

Method

Preheat your oven/air-frier or grill to full whack. Mix all the ingredients together and top with the cheese. Cook until golden and bubbling. Serve with a final squirt of sriracha and some more fresh coriander to serve.

 

Tip: 0% Greek Yoghurt works very well instead of mayo.
