Mediterranean Cod

Ingredients

4 Cod fillets

200ml White wine

8 Tomatoes, sliced into quarters

32 Olives, sliced in half

Lemon zest

4 tsp Olive oil

1 tsp Chilli flakes

Fresh parsley

1/4 plate Baby potatoes

Method

Preheat oven to 180 degrees

Place the cod fillets into a shallow ovenproof dish.

Pour the white wine to cover half of the fish, then add the olives, tomatoes and lemon zest.

Then drizzle over the olive and season with chilli flakes and salt & pepper.

Place dish in oven and cook for around 18-20 mins until cooked through.

Remove from oven and top with fresh parsley.

Serve with 1/4 plate baby potatoes and steamed vegetables of your choice.
