Lamb Kofta and Tzatziki Wrap

That's a wrap, and an unbelievably delicious one at that.

Ingredients

125g extra lean minced lamb

½ tsp ground cumin

½ tsp ground coriander

A few sprigs of mint, finely chopped

A few sprigs of parsley, finely chopped

Grated zest of ½ lemon

1 x 60g wholemeal wrap or pitta

A few mixed salad leaves, e.g. rocket, spinach, watercress

¼ red onion, thinly sliced

3 cherry or baby plum tomatoes, sliced

Salt and freshly ground black pepper

Tzatziki:

4 tbsp 0% fat Greek yoghurt

1 large chunk cucumber, diced

1 garlic clove, crushed

Juice of ½ small lemon

A few sprigs of mint, chopped

Method

 

Mix together the lamb, ground spices, herbs, lemon zest and seasoning in a bowl. Use your hands to mold it around a wooden skewer into 1 long or 2 smaller cylindrical shapes.

 

Place on a wire rack standing in a foil-lined grill pan. Cook under a hot preheated grill for 6–8 minutes, turning once or twice, until golden brown all over. If you like your lamb slightly pink, reduce the cooking time accordingly.

 

Meanwhile, mix the tzatziki ingredients together in a bowl.

 

Warm the wrap in a griddle pan or low oven. Remove the skewer(s) from the lamb kofta(s) and place with some salad leaves, red onion, and tomatoes on the warm wrap. Spoon the tzatziki over the top and roll up or fold over. Eat immediately.
