High Protein Blueberry Baked Oats

We have tried dozens of baked oat recipes and this is one of our absolute favourites. With 20g protein per serving, it's going to keep you full right up until lunch time. The creamy cottage cheese definitely helps with the moist texture. Lovely served warm or at room temperature with an extra dollop of 0% yoghurt

Ingredients

140g Cottage Cheese

90g Oats

2 Eggs

1 Tbsp Sweetener (we used Splenda)

1/2 tsp Baking powder

handful of Frozen blueberries

Method

Preheat the airfrier to 180 degrees Celsius.

Combine all in the ingredients (bar the frozen blueberries) into a nutri-bullet type blender. Blitz.

Spray two silicone pudding moulds with oil, and add a layer of frozen blueberries.

Pour in the batter and air-fry for 12 minutes. Serve with a dollop of your favourite fat free yoghurt and a drizzle of honey (1/2 bite per tsp)
