Herbed Rack of Lamb with Roast Potatoes

Our Herbed Rack of Lamb is a Unislim favourite, serve with roast potatoes or Gorge-Us chips for a crowd pleasing dinner.

Ingredients

30g breadcrumbs

2 tsp fresh parsley, chopped

1 tbsp fresh thyme

2 sprigs of fresh rosemary

low cal spray oil

lemon zest from half a lemon

2 tsp olive oil

30g parmesan, grated

Rack of lamb

200g Gorge Us Chips

Method

In a bowl combine breadcrumbs, herbs, lemon zest, olive oil and parmesan. With a food processor whizz, together until thoroughly combined. Heat low Cal spray oil over a medium heat in a frying pan. Season your rack of lamb and fry on all sides until browned. With your hands press the herb crust over the lamb, drizzle with a little olive oil and roast for 25 minutes or until the crust is golden and the lamb is fully cooked.

Slice the lamb rack into individual chops being careful to keep the crust intact. Serve alongside Roast Potatoes or our Gorge Us Chips
