225g Self Raising Flour
300g Mixed Dried Fruit
1tsp Sweetener
300ml Cold Tea
beaten 1 Egg
pinch Mixed Spice
Place the mixed fruit in a bowl and leave it to soak overnight.
Add the sweetener, egg, flour and spices and mix well.
Then, transfer to a greased and base-lined 900g/2lb loaf tin or a 20cm/8″ round cake tin.
Bake in a preheated oven 170°C/325°F/Gas 3 for approximately one hour or until risen and firm to touch.
Cool the mixture on a wire tray
Wrap in cold wrap greaseproof paper, keep for two days before cutting.
