Ingredients

1 Medium size pumpkin

2 Carrots

1 Onion

1 Garlic cloves

1tbsp Grated fresh ginger

optional Curry powder or cayenne pepper or black pepper

Method

Peel the pumpkin or cut it open and scoop out the flesh.
Chop carrots and garlic.
Peel the onion and cut into chunks.
Put the above ingredients into a big saucepan, cover the veg with water. Add the spices if you wish. Bring to the boil and reduce to a simmer for about 20 minutes or until all veg is soft.
Season to taste. Add some parsley to garnish.
