1kg Fillet of Beef, Centre Cut
1 net Brussell Sprouts
4 Carrots, cut into batons
1 small bunch Thyme, leaves picked
3 small Garlic Cloves, thinly sliced
3 Onions, halved
100g Butter, at room temp
1 large Garlic, crushed
2 Tbsp Fresh Parsley, chopped
Make your garlic butter by combining all the butter, 1 crushed garlic clove and chopped fresh parsley. Placeinto a ramekin and refrigerate until needed.
Firstly, preheat the oven to 220 degrees. Toss all your veggies together, add then thyme leaves, season well and spray with oil. Place on your largest oven roasting dish.
Take your fillet of beef, dry with kitchen paper and season well. Get your largest frying pan and spray with oil under the highest heat on your hob. Sear the fillet on all sides.
Place the beef on top of the veggies and bake for 35 minutes for medium rare, 40 minute from medium to well done.
Remove from oven and wrap the beef in tinfoil. Allow to rest for at least 10minutes before carving. (this is important!) Add thin slivers of the garlic butter on top before serving. And drizzle the resting juices back over the meat.
