Ingredients

120g Wholewheat pasta

1 Chopped Onion

1 Crushed Garlic Clove

Mixture of your Favourite Vegetables

1 Tin of tomatoes

Chilli flakes or chopped fresh chilli

30g Parmesan Cheese

Salad Leaves

Method

Cook 120g of wholemeal pasta as per packet instructions.

Add chopped, onion, crushed garlic and vegetables of your choice with a tin of tomatoes in to a pan.

Simmer until the vegetables are tender and blend, add a little chilli if you like a little spice.

Mix sauce with pasta and serve with 30g grated parmesan cheese and some salad leafs. (makes enough for 2 lunches)
