
Garlic Ginger Chicken Rice Bowl

1 low cal spray oil
200g Sirloin steak, cut into strips
1 sprinkle Paprika
1 sprinkle Cumin
1 Large red pepper, cut into strips
1 Red onion, cut into strips
2 tbsp Fresh coriander, chopped
2-3 Tomatoes, diced
2 tbsp Reduced fat creme fraiche
1 Shredded lettuce
2 Wholemeal Tortilla wraps
1 Salt and pepper
Heat the low cal spray in a large pan.
Add the onion and cook for 2-3 mins. Add the beef strips, paprika, cumin, salt, pepper and stir well.
Cook for 4-5 mins before adding the red pepper strips and cooking for another 2-3 mins, cooking the beef through.
Stir in the chopped coriander and remove from the heat.
Create your fajita by layering the beef mixture, shredded lettuce, tomatoes and reduced fat cream fraiche (add 1 yum per 30g serving) on your tortilla before rolling and serving.
