1/2 onion
1 tsp tumeric
1 tsp garam masala
1 garlic clove
2 tbsp curry powder (add more to taste)
1 tin chopped tomatoes
40g reduced fat creme fraiche
2 carrots
120ml passata
400ml chicken stock
4 chicken breasts, diced
400g unislim Gorge Us chips
240g basmati rice
Heat a pan to a medium-high heat. Sautée the onion and garlic cloves. Add chopped carrots and the spices.
Add a tin of tomatoes and passata to the pan.
Once the tomatoes are cooked, add the chicken stock and cooked chicken to the mix.
Allow to simmer for 10 minutes, taste and add more curry powder if needed.
Once the curry is cooked, stir in reduced fat creme fraiche (optional).
Boil the basmati rice and Unislim Gorge Us Chips in oven, as per packet instructions.
Serve Layered.
