Ingredients

800g potatoes, diced

4 shallots, sliced

low cal oil

2 tsp dried oregano

400g small mushrooms

4 eggs

Method

Preheat oven to 180C.

Add the potatoes and shallots into a large, non-stick roasting tin and spray with low cal oil.

Sprinkle over the oregano, then mix everything together well.

Bake for bake for 40-45 mins until beginning to brown, add the mushrooms, then cook for a further 10 mins until the potatoes are browned and tender.

When the potatoes are almost done, heat up a non-stick pan and proceed to fry the eggs.

Serve onto a plate along with the potatoes, shallots & mushrooms and enjoy
