  • 2 tbsp tomato purée
  • 2 wholewheat tortilla wraps
  • 1 red onion, thinly sliced
  • 1 red pepper, de-seeded & thinly sliced
  • 1 yellow pepper, de-seeded & thinly sliced
  • 80g diced ham
  • 1 tbsp chopped oregano or parsley
  • 60g grated reduced-fat Cheddar or Gruyere

Spread the tomato puree over the tortillas.

Sprinkle the onion and peppers over the top.

Dot with the ham and top with herbs and cheese.

Place on a baking tray and bake at 200°, gas mark 6 for 10 minutes until crisp and golden brown.
