Curried Chicken Salad

Use left overs from your Sunday roast to make this yummy light lunch.

Ingredients

1 cup plain low-fat or fat-free yogurt

1 cup thinly sliced celery

2 tspn curry powder

Lettuce leaves

2 cups chopped left over chicken

Method

Mix yogurt with grapes, celery and curry powder and a dash of salt.

Then add the chicken to the yogurt mixture and give it a stir.

Chop the lettuce, and place into bowls. Spoon the mixture onto the lettuce beds.

Serve immediately or chil untill ready to serve.

Optionally, toss in some almonds or cashew nuts for added crunch and nutrition but don’t forget they’re 2.5 Bites per 30g!
