1 Low cal spray oil
200g Chicken, diced
1 sprinkle Paprika
1 sprinkle Cumin
1 Large red pepper, cut into strips
1 Red onion, cut into strips
2 tbsp Fresh coriander, chopped
2-3 Tomatoes, diced
60g Reduced fat creme fraiche
1 Shredded lettuce
2 Wholemeal tortilla wraps
60g Reduced fat cheese, grated
Heat the low cal spray in a large pan.
Add the onion and cook for 2-3 mins. Add the chicken strips, paprika, cumin, salt, pepper and stir well.
Cook for 4-5 mins before adding the red pepper strips and cooking for another 2-3 mins, cooking the beef through.
Stir in the chopped coriander and remove from the heat.
Layer the beef mixture, shredded lettuce, tomatoes and reduced fat cream fraiche on your tortilla.
Add your cheese, then place another tortilla on top.
Place on the grill and heat until cheese melts and tortillas are slightly browned.
Cut into 4 triangles and serve.
