low cal spray oil

4 chicken fillets

1 tin of chopped tomatoes

2 chopped finely scallions

1 red pepper

1 yellow pepper

red onion

3 tbsps quark cheese

as hot as you like fresh chilli (or dried chilli flakes)

1 tsp paprika

fresh coriander

4 wholemeal wraps

Method

Spritz some low cal spray oil into a frying pan and gently fry off the chicken fillets.

Once cooked, remove the fillets from the pan and chop into bite-sized chunks.

In the pan, saute off the peppers, onions, they should still have some crunch to them. Add in a tin of chopped tomatoes, chilli and paprika, as well as the cooked chicken pieces.

Stir in 3 tbsps of quark cheese for a creamy consistency.

To make the cups 

Preheat the oven to 180 degrees.

Using 4 ovenproof bowls, fit the wholemeal wraps into the bowls, creating a cup shape.

Place in the hot oven for about 5 minutes, until the shape has been formed and the wraps start to go slightly crispy.

Fill the cups with the chilli chicken mixture, top each cup with fresh coriander and thinly sliced scallions.

Optional – sprinkle each finished cup with some grated low fat cheese.

Serve with a fresh crunchy green salad.
