600g chopped potatoes
100g curly kale
6 scallions, finely chopped
30g low fat butter
black pepper
Boil chopped potatoes in salted water until soft & ready for mashing.
Meanwhile, in another pan blanch 100g curly kale for 60 secs. Put the kale into a food processor and add in 6 finely chopped scallions and blitz for about 10 seconds. Mash the potato and add 30g low fat butter. Add the kale & onion and mix together.
Season with a little salt and a good twist of black pepper.
