Chilli Beef Bowl

  • 30g reduced fat grated cheese
  • 4 large ice berg lettuce leaves
  • 500g extra lean mince beef
  • 1/4 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp chili flakes, crushed
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cajun seasoning
  • Extra light mayo
  • 1 tbsp tomato puree
  • Fresh chilli
  • 1 tbsp minced garlic
  • 8 cherry tomatoes, halved
  • 1 avocado, diced
  • 1 green chili, chopped

Mix together the oregano, paprika, cumin, sea salt, chilli flakes, onion powder, garlic powder and cajun seasoning.

Add the seasoning mix to the extra lean mince beef and brown in a hot pan.

Add in the cherry tomatoes and green chilli and cook until soft.

Stir in the avocado.

Serve in the 4 large iceberg lettuce leaves and top each with the reduced fat grated cheese.

In a small bowl make a taco sauce by mixing the extra light mayo, tomato puree, fresh chilli and minced garlic.
