1 onion, finely chopped
2 celery sticks, finely chopped
2 carrots, peeled and chopped
2 tomatoes, finely chopped
500ml chicken stock
60g (uncooked) macaroni pasta
2 chicken breast
30g parmesan
low cal cooking spray
to garnish basil
Heat low cal cooking spray in a saucepan. Add vegetables and chicken and lightly cook for about 8 minutes. Add in chicken stock and cover, simmer gently for an hour.
Add in the macaroni pasta and cook for another 20 minutes
Adjust seasoning, Serve warm and garnish with Parmesan and basil
