4 chicken breasts, skin removed
6 tsp (1.5 tsp each) pesto
120g (30g each) extra light cream cheese
4 slices smoked lean ham or rindless bacon
Slice the chicken in half, keeping one edge touching to make it easier for stuffing.
Spread one and half tsp of pesto to inside of each chicken.
Repeat same with 30g of cheese per chicken breast.
Wrap with your ham or bacon.
Bake at 180C for 30 minutes, until chicken is cooked through and the ham/bacon is crispy.
Serve immediately with your choice of Free to Choose carbohydrates and either salad or veg.
