Cashew Chicken

Show that special someone a little extra loving with this tasty stir-fry.

Ingredients

Low-cal spray oil

2 garlic cloves, crushed

1 inch root ginger, grated

2 chicken breasts, thinly sliced

Sugar snap peas

String beans

Mange tout

Baby sweet corn

1 red pepper, thinly sliced

1 onion, diced

Soy sauce

24g chopped roasted cashew nuts

120g noodles or basmati rice

Method

Spritz the low-cal spray oil into a pan. Add the garlic and the ginger.

Add the chicken breasts and stir fry together with the sugar snap peas, string beans, mange tout, baby sweet corn, peppers, and onion.

Splash liberally with the soy sauce.

Serve with either the noodles or the basmati rice and top each plate with roasted cashew nuts.
