240g Whole Wheat Pasta
4 tbsp Frozen Peas
4 Clove of Garlic, grated
8 Lean Bacon Rashers, thinly sliced
4 Eggs
4 tbsp Low Fat Natural Fromage Frais
60g Parmesan Cheese, grated
1 tsp Black Pepper
2 tsp Fresh Parsley, chopped
Cook the spaghetti as per packet directions. About 3 minutes before it is done, stir in the peas and garlic.
Spray a non-stick pan with Low Cal spray and cook the bacon until crisp.
Whisk the egg, fromage frais, half the parmesan, black pepper and parsley together.
When the pasta and peas are done, stir into the bacon. Next pour in the egg mixture stirring quickly so the eggs don’t scramble. Let stand for 5 minutes, stirring occasionally, to thicken the sauce.
Sprinkle with the remaining Parmesan cheese.
