1 head cauliflour
1 egg
15g parmesan, finely grated
2 tbsp tomato purée
1 fillet - cooked chicken
30g light mozzerella
chopped tomatoes
1 clove garlic, chopped
a pinch of salt and pepper
a few basil leaves
Line a baking sheet with parchment paper and heat oven to 200℃.
Blitz cauliflower in a food processor until it resembles crumbs.
Place the cauliflower in a bowl and microwave for approx 7 minutes. Remove from the microwave and leave to cool.
Mix the cauliflower with the egg, parmesan and salt & pepper. Once combined, pat it into the prepared baking sheet.
Bake for 10 to 15 minutes until it is golden.
Top the pizza with tomato purée, mozzarella, tomatoes, chicken garlic and any of your favourite veggies.
Bake into the oven until cooked through and golden.
Serve topped with basil leaves.
