4 skinless chicken breasts
4 tsp olive oil
4 rashers, smoked bacon, all fat removed
4 60g wholemeal buns
120g low fat cheddar cheese
baby spinach leaves
lighter than light mayo
For the cajun seasoning
1 tbsp ground cumin
1 tbsp ground paprika
1 tbsp ground coriander
Serves 4
1.5 Bites per serving
Mix the seasoning ingredients together. Flatten out the chicken breasts slightly by placing in a sandwich bag and beating gently with a rolling pin. Drizzle some olive oil over each chicken breast and toss in the seasoning until completely covered. Spritz a pan with low cal spray oil and once hot, fry the chicken until cooked through before adding the bacon to the pan.
Toast the wholemeal buns and top with lettuce, sliced tomato and onion. Assemble the burger by adding the chicken, bacon, 30g slice of reduced fat cheese and lighter than light mayo.
