400g lean (5%) beef steak mince
1 tbsp tomato puree
2 garlic cloves, crushed
1 tsp paprika (ideally smoked)
1 tsp ground coriander
2 medium vine tomatoes, chopped
1 ripe avocado, chopped
1/4 red onion, finely chopped
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp lemon juice
salt and pepper to taste
4 x 60g wholemeal buns
For the burger
In a large mixing bowl, combine the mince, garlic, puree, paprika and coriander. Season with black pepper then divide the mixture into four burgers and put on a plate. Cover and chill for at least 30 minutes or up to 24 hours.
Add a tiny drizzle of cooking oil to a non-stick frying pan. Add the burgers to a hot pan and cook for approx. 4 minutes on each side until cooked through and to your liking. Serve each burger topped with sliced red onion and tomato on a lightly toasted wholemeal bun.
For the salad
Combine all ingredients in a bowl, toss together and serve a portion of salad alongside each beef burger
