Bruschetta Rolls

Because everything's better with bruschetta!

Ingredients

2 x 65g wholemeal rolls, halved

2 garlic cloves, peeled and halved

1 ripe tomato, halved

Method

Toast the rolls lightly under a grill.

Rub one side of each with a cut garlic clove.

Rub the cut tomato over the garlic side of the toast, squeezing the juices out over the bread.

Select one of the toppings below and proceed as directed.

Chicken and Hummus

Spread low-fat hummus over the toasted rolls and sprinkled with lemon juice and chilli. Top with grated carrot and shredded, cooked, chicken.

Beets and Goat’s Cheese

Spread goat’s cheese over the toasted rolls. Arrange cooked beetroot and shredded mixed greens on top. Sprinkle with vinaigrette and top with half an avocado.

Grilled Pepper and Cheese

Spread 60g light cream cheese over the rolls and sprinkle with 20g raisins, a thinly sliced bottled green pepper and parsley.
