Breakfast Pizza

Ingredients

2 eggs

30g grated low-fat mozzarella cheese

1 sliced tomato

Half an avocado

1 wholemeal tortilla wrap

Chopped coriander

2 lean bacon rashers (rinds removed)

1/2 red onion, thinly sliced

Method

In a pan, scramble the eggs and season with salt and pepper, but make sure to leave them a little runny.

Place the tortilla wrap on a baking tray.

Grill 2 lean bacon rashers, remove the rinds and roughly chop.

Spread the egg mix on the tortilla, scatter the tomatoes, bacon pieces, sliced red onion, mozzarella and avocado on top. Place under the grill until mozzarella is melted.

Scatter some coriander on top.

Roll it up like a wrap or eat it like a pizza.

Optional, top with a spoonful of low fat green style yogurt.
