125g flour
1 tsp salt
2 tsp baking powder
90g grated raw potatoes
200g mashed potatoe
2 eggs
2 scallions, finely chopped
a tbsp fresh parsley
50ml skimmed milk
low cal spray oil
2 Bites per serving
In a bowl, whisk together 125g of flour, a tsp of salt and 2 tsps of baking powder. Place your grated raw potatoes in a clean tea towel and twist to remove excess moisture. Add the grated potatoes, mashed potatoes, 2 lightly beaten eggs, scallions, and a sprinkle of fresh parsley to the bowl.
Loosen the mixture by stirring in skimmed milk. Stir until it forms a batter. Heat a pan over a medium heat and spritz with low cal spray oil. Drop the batter into the pan by the tablespoon, making small crumpet sized pancakes. Brown on both sides for about 4 mins each. Serve with a poached egg and wilted spinach on top.
