BBQ Chicken Skewers

Ingredients

2 tbsp Low cal natural yogurt

2 crushed garlic cloves

1/2 teaspoon chilli powder

1/2 tsp coriander

1/2 tspn cumin

pinch Salt and black pepper

50g tomato puree

4 chopped Chicken fillets

1 chopped into chunks onion

1 chopped courgette

1 chopped into chunks tomato

1 chopped into chunks green pepper

Method

Soak 8-10 wooden skewers.

In a bowl mix 2 tbsp low cal natural yogurt, garlic, chilli powder, coriander, cumin, salt, pepper and tomato puree.

Chop 4 chicken fillets into cubes and add to the mix, coating all the pieces.

Cover and refrigerate for 2-3 hours.

Thread the chicken onto the skewers, alternating the chicken with chunks of onion, courgettes, tomato and green pepper.

Grill for 15 mins until cooked through and golden brown.

Add a few drops of water when grilling to achieve the sizzling effect- serve with our delicious Salsa.
